Make a Brownie Sundae Cookie at home

Makes 6 large cookies. This is our home version, not Crumbl’s recipe, so expect it to look and taste close rather than identical.

Steps

1. Mix the batter. Heat the oven to 350°F. Whisk the melted butter with both sugars until glossy, then beat in the egg and vanilla. Sift in the flour, cocoa, baking powder, and salt, fold until just combined, and stir in the chocolate chunks.
2. Bake. Divide the dough into 6 portions (about 3.5 oz each), press each slightly onto a parchment-lined sheet, and bake 10 to 12 minutes, until the edges set but the centers stay soft. Cool completely on the pan.
3. Whip the mousse. In a cold bowl, whip the cream, cream cheese, powdered sugar, and vanilla to stiff peaks. Spoon into a piping bag with a large star tip.
4. Make the fudge and assemble. Heat the 3 tbsp cream, pour it over the chocolate chips, and stir until smooth. Pipe a swirl of mousse on each cooled cookie, drizzle with fudge, add sprinkles, and top with a cherry.
